    Mix chopped dried fruits, dried beef, and orange peel thoroughly with spices, sugar, flavoring, vine- gar, oil, syrup, egg, and flour

    Work in enough cider, brandy or rum to make a heavy dough

    Put dough into an 8 inch pan and bake at 325 degrees F

  • 4

    for an hour or longer, until it sets well and is not too sticky

  • 5

    Spiced Pemmican can be kept for several weeks.

SPICED PEMMICAN

ingredients

  • 1/2 cup each apricots, dates and raisins
  • 1/2 cup dried beef
  • Peel of I orange, grated
  • 3/4 cup firmly packed brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. each nutmeg, and allspice
  • Pinch salt
  • 1 tsp. vanilla
  • 1 TB each vinegar, oil, and maple syrup
  • 1/2 of a beaten egg
  • 1/2 cup flour
  • Cider, brandy, or rum to make a heavy dough.
