Cut the fruits into small thin slices

Mix all the fruits in a bowl with amaretto liqueur and let mari- nate over night. Cook beef tongue until tender

Mix tongue with dried fruits, cur- rants, brown sugar, sweet cider, and pineapple juice

Simmer, while stirring, until thickened and fruits are tender. Before removing from heat, stir in candied pineap- ple, orange and lemon peels, and mace

Remove from heat and mix in the marmalade and almonds

After finished mixing, pour the liqueur over the mincemeat.

ingredients
- 2 cups beef tongue
- 4 cups dried apples
- 1 cup dried peaches
- 1/2 cup each prunes and apricots
- 1/2 cup each raisins and currants
- 1/2 cup amaretto liqueur
- 4 cups light brown sugar
- 4 cups sweet cider
- 2 cups pineapple juice
- 1 cup almond slices
- 1 cup mix of orange and lemon peels, chopped
- 1/2 candied pineapple
- 1 tsp. mace
- 1 cup orange marmalade
