Cut up orange and lemon to remove seeds

Use the coarse blades of a food processor to grind pears, orange, and lemon together

Add raisins, sugar, spices, and ginger to the fruit

Mix in a kettle and bring to a boil

Stir constantly as it comes to a boil. Reduce heat and cook for about 30 minutes

Remove from heat when the mincemeat has thick- ened and appears glossy

Stir in the Grand Marnier and the drops of angostura bitters.
SWEET PEAR MINCEMEAT
ingredients
- 12 medium sized pears, peeled
- 1 orange unpeeled
- 1 lemon unpeeled
- 2 cups dried peaches
- 2 cups raisins
- 2 cups sugar or corn syrup
- 1/2 tsp. each of nutmeg, mace, cinnamon
- 1/4 cup crystallized ginger, chopped
- 1/4 cup Grand Marnier
- 4 drops Angostura Bitters
