Simmer mixture for at least an hour, stirring often

Remove from heat when the mincemeat is thickened and the apples are tender

When a spoonful of mincemeat is placed on a dish, liquid should not separate from it. Add fruit juice to the mincemeat if it becomes dry before it is fully cooked

After the mincemeat is cooked and cooled, you may add nuts, mar- malade, jam, or brandied fruits

Try one to two cups of one or more of them. After the mincemeat is finished, two cups of liqueur or wine can be poured over it to help preserve it and enhance the flavor

Cover the mincemeat and let it ripen in the refrigerator for three weeks.
DELIGHTFUL MINCEMEAT
ingredients
- 4 cups lean ground beef or ground venison
- 8 cups peeled chopped apples
- 2 cups beef suet
- 2 cups raisins
- 2 cups currants
- 1 cup chopped citron
- 4 cups sugar and corn syrup (mix 2 cups each)
- 4 cups dried fruit
- 4 cups broth or fruit juice
- 1 tsp. each of cinnamon, cloves, nutmeg
- 1 tsp. salt
