Toss dried pears with lemon juice and set aside

Blend egg yolks, milk, sour cream and vanilla in a large bowl

In medium bowl, sift together flour, baking powder, salt, nutmeg and cinnamon

In another medium bowl, beat egg whites until frothy

Gradually add sugar and continue beating until stiff peaks form

Add flour mixture to egg yolk mixture and blend

Fold stiffly beaten egg whites and dried pears tossed with lemon juice into batter

In a heavy pan or deep fryer, heat 2 inches of oil or shortening to 375 degrees F

Drop batter by slightly rounded teaspoonfuls into hot oil or shortening

Larger fritters will be doughy in the center

Fry until crisp and golden brown, turning once.

ingredients
- 3/4 cup chopped dried pears
- 1 TB lemon juice
- 2 egg yolks, beaten
- 1/4 cup milk
- 1/3 cup dairy sour cream or nonfat yogurt
- 1/2 tsp. vanilla extract
- 1 1/3 cups all-purpose flour (or 1 cup all purpose
- flour and 1/3 cup whole wheat flour)
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/4 tsp. cinnamon
- 2 egg whites
- 2 TB sugar
- oil or shortening for frying
- cinnamon sugar (see below) or
- powdered sugar, if desired
