Preheat oven to 350 degrees F

Grease 12 to 14 muf- fin pan cups; set aside

Place whole-wheat flour, all-purpose flour, and bran flakes in large bowl

Add baking soda and salt

Stir

Add dried fruit and nuts to flour mixture

Mix well to coat

In a medium bowl, mix egg, buttermilk, honey and melted butter or margarine

Pour all at once into flour and fruit mixture

Stir only until moistened

Fill muffin pan cups 3/4 full

Bake in preheated oven 20 to 25 minutes

BRAN MUFFINS
ingredients
- 1 cup whole-wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup bran flakes
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 to 3/4 cup dried, diced apples, apricots, bananas,
- cherries, dates, prunes, pineapple or raisins
- 1/3 cup chopped nuts, if desired
- 1 egg, beaten
- 1 1/4 cups buttermilk
- 1/2 cup honey
- 1/4 cup butter or margarine melted
