    In a large bowl, combine bran cereal with water; stir to moisten evenly, then allow to cool until luke- warm

    Stir in egg, buttermilk, honey, butter, dried fruit, and nuts until well blended. In another bowl, combine whole wheat and all-pur- pose flours, salt, and soda

    Combine dry ingredi- ents with liquid ingredients; stir just until evenly moistened

    Spoon into greased or paper-lined muf- fin pans, filling them 3/4 full

    Bake in a 425 degree F

    oven for 20 to 25 minutes or until pick inserted in center comes out clean

    Makes 12 to 16 muffins

    Serve hot or cold.

  • 11/2 cups whole bran cereal (not bran flakes)
  • 1/2 cup boiling water
  • 1 egg, lightly beaten
  • 1 cup buttermilk
  • 1/2 cup honey
  • 1/4 cup melted butter or margarine
  • 1 1/2 cups mixed dried fruit (raisins, chopped dates,
  • prunes, or figs)
  • 1/2 cup chopped nuts
  • 1/2 cup whole wheat flour, unsifted
  • 3/4 cup all-purpose flour, unsifted
  • 1/2 tsp. salt
  • 11/4 tsp. soda
