BANANA BREAD

    Preheat oven to 350 degrees F

    Generously grease and flour a 9 x 5 loaf pan; set aside

    In a large bowl, cream shortening with brown sugar

  • 4

    Add eggs and orange peel; beat well

  • 5

    Sift together 2 3/4 cups flour, baking powder, baking soda and salt

  • 6

    Add flour mixture to creamed mixture alternately with mashed banana and milk

  • 7

    Beat well

  • 8

    In a small bowl, coat nuts and chopped fruit with 1/4 cup flour

    Stir into batter

  • 10

    Pour into prepared loaf pan

  • 11

    Bake in preheated oven about 1 hour, until a wood- en pick inserted in the center comes out clean

    Cool 10 minutes in pan

  • 13

    Remove from pan and cool on a cooling rack

    Makes 1 loaf.

  • 1/2 cup shortening
  • 3/4 cup brown sugar, firmly packed
  • 2 eggs
  • 1 tsp. grated orange peel
  • 1 1/3 cups all-purpose flour
  • 2/3 cup whole wheat flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 cup mashed banana
  • 1/4 cup milk
  • 3/4 cup chopped nuts
  • 3/4 to 1 cup chopped dried apricots or dates
