Cover apricots with 1 cup warm water

Let soak 15 minutes

Drain (save 1/4 cup of the liquid)

Combine oil, egg and orange juice with reserved apricot liquid

Add this mixture, the drained apri- cots and the walnuts, to the flour mixture

Stir just enough to moisten the dry ingredients. Spread in greased and floured 9x5 inch loaf pan

Bake at 350 degrees for about 55 minutes, or until a toothpick inserted in the center comes out clean

Cool for 10 minutes

Remove from pan and finish cooling on a wire rack

Store in refrigerator until used.
APRICOT NUT BREAD
ingredients
- 1 cup finely chopped dried apricots
- 1 cup warm water
- 1 1/3 cup all-purpose flour
- 2/3 cup whole wheat flour
- 1/4 cup dry milk
- 2 tsp. baking powder
- I tsp. salt
- 1/4 cup safflower oil
- 1 egg, beaten
- 1/4 cup orange juice
- 1 cup walnuts, chopped
