CRANBERRIES

- Selection: Select fresh firm cranberries.
- Cranberries do not dry as well as other fruits. The
- large bright red variety or the sweet dark variety
- dry the best. Cranberries are great when dried as
- part of a fruit leather recipe.
- Preparation: Wash well. Refrigerate until ready to
- process.
- Pretreatment: Blanch in boiling water to crack the
- skins.
- Drying time: Dehydrator: 12 to 24 hours; sun: 1 to
- 2 days.
- Dryness test: No sign of moisture; sticky.
- Storage time: 4 to 6 months at 70 degrees F
