  • Selection: Select fresh firm cranberries.
  • Cranberries do not dry as well as other fruits. The
  • large bright red variety or the sweet dark variety
  • dry the best. Cranberries are great when dried as
  • part of a fruit leather recipe.
  • Preparation: Wash well. Refrigerate until ready to
  • process.
  • Pretreatment: Blanch in boiling water to crack the
  • skins.
  • Drying time: Dehydrator: 12 to 24 hours; sun: 1 to
  • 2 days.
  • Dryness test: No sign of moisture; sticky.
  • Storage time: 4 to 6 months at 70 degrees F
