  • Selection: Select fresh coconuts that seem to be
  • heavy with milk. Refrigerate coconuts until ready
  • to dehydrate.
  • Preparation: Pierce eye of the coconut with an ice
  • pick to drain the milk. Strain milk to drink. Use a
  • hammer to crack the middle of the coconut. Steam
  • the shell for 30 to 60 seconds to loosen the coconut
  • meat. Trim the dark outer skin and grate or slice
  • coconut into chunks for drying.
  • Pretreatment: None
  • Drying time: Dehydrator: 8 to 10 hours; sun: 1 to 2
  • days.
  • Refreshing: Use dry, or soak in water until tender
  • before using in a recipe.
  • Storage time: 2 to 4 weeks at 70 degrees F.
