- Selection: Select fresh coconuts that seem to be
- heavy with milk. Refrigerate coconuts until ready
- to dehydrate.
- Preparation: Pierce eye of the coconut with an ice
- pick to drain the milk. Strain milk to drink. Use a
- hammer to crack the middle of the coconut. Steam
- the shell for 30 to 60 seconds to loosen the coconut
- meat. Trim the dark outer skin and grate or slice
- coconut into chunks for drying.
- Pretreatment: None
- Drying time: Dehydrator: 8 to 10 hours; sun: 1 to 2
- days.
- Refreshing: Use dry, or soak in water until tender
- before using in a recipe.
- Storage time: 2 to 4 weeks at 70 degrees F.
