- Preparation: Stem, wash, drain, and pit. Cherries may be halved or left whole.
- Pretreatment: If cut and pitted no pretreatment is needed. Dip whole cherries in boiling water to crack skin.
- Drying time: Dehydrator: 24 hours; oven: 4 to 6 hours. Start at 120 degrees F. and increase to 145 degrees F.
- Dryness test: Leathery and sticky.
- Refreshing: Pour 2 cups hot water to 1 cup cherries
- and soak 2 hours.
- Storage time: 8 to 12 months at 70 degrees F.
