Heat oil in a wide saucepan

Add mushrooms and saute 4 minutes

Stir in scallions, zucchini, Canadian bacon and garlic and saute over medium high heat, stirring, until tender, about 8 minutes

Add tomatoes, wine and mushroom powder; cook, stirring, 5 minutes

Add parsley, basil, salt and pepper

Zucchinni, Mushroom, and Fresh Tomato Sauce
ingredients
- 2 tablespoons olive oil
- 1 cup diced trimmed mushrooms
- 1/3 cup chopped scallions, some tops included
- 2 cups finely diced trimmed zucchini
- 4 (1/4-inch-thick) slices of Canadian bacon, cut into thin strips
- 1 garlic clove, crushed
- 1 cup chopped fresh tomatoes
- 1 cup dry red wine
- 1 tablespoon mushroom powder
- 1/4 cup chopped Italian flat-leaf parsley
- 2 tablespoons chopped fresh basil
- salt and freshly grated black pepper
- freshly grated Parmesan cheese
