- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/2 red onion, cut into thin lengthwise slices
- 2 garlic cloves, minced
- 1 bunch arugula, rinsed and trimmed,
- about 1 cup packed
- salt and freshly ground black pepper to taste
