In a medium-size skillet, heat the oil over medium- high heat

Saute for 2 minutes. Sprinkle the flour over the chicken and shallots, stirring constantly until the flour is well blended. Add the chicken broth and wine

Cook, stirring, until the sauce has thickened

Add the capers, lemon juice, pepper, artichokes, and snowpeas and cook for about 3 minutes
Chicken Artichoke Sauce
ingredients
- 3 tablespoons olive oil
- 1 pound chicken breast, skin removed
- and cut into strips
- 1/2 cup chopped shallots
- 2 tablespoons flour
- 1-1/2 cups chicken broth
- 1 cup dry white wine
- 2 tablespoons capers, drained
- 1 tablespoon lemon juice
- freshly ground black pepper to taste
- 1 (14-ounce) can artichoke hearts,
- drained and cut into quarters
- 1/4 pound snowpeas, cut into thin slivers
