    Heat the oil in a large skillet over medium high heat

    Add the garlic and chicken and saute for 4 minutes

    Sprinkle the flour over the chicken and mix well

    Reduce the heat to medium and add the wine, chicken broth, and lemon juice

    Cook, stir- ring constantly, until the sauce thickens

    Stir in the zucchini, scallions, salt and black pepper, and sum- mer savory and heat through

    Serve over hot pasta Serves 4.

Lemony Chicken Zucchini

ingredients

  • 1/4 cup olive oil
  • 5 large garlic cloves, minced
  • 2 whole boneless chicken breasts,
  • cut into 2-inch strips
  • 2-1/2 tablespoons flour
  • 1 cup dry white wine
  • 1 cup chicken broth
  • juice of 1 lemon
  • 1 cup coarsely grated zucchini, firmly packed
  • 4 scallions, including green tops, sliced
  • salt and freshly ground black pepper to taste
  • 1 teaspoon dried summer savory
