Yogurt Herb Sauce

    Melt butter in a saucepan and cook onion and gar- lic over a medium heat for 2 to 3 minutes

    Stir in flour and vegetable stock and cook, stirring con- stantly, for an additional 4 to 5 minutes or until sauce boils and thickens

    Remove from heat, stir in yogurt and simmer over a low heat for 2 to 3 min- utes longer

    Mix in parsley, basil and chives and season to taste with black pepper

  • 5

    Spoon over pasta and serve immediately

    Serves 4.

  • 1/2 ounce butter
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons flour
  • 1/2 cup vegetable stock
  • 1-3/4 cups natural yogurt
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons snipped fresh chives
  • freshly ground black pepper
