Heat oil in a medium skillet

Add the onion and saute until golden

Stir in the tomatoes and garlic; set aside. Meanwhile, cook pasta in plenty of boiling salted water about 3 minutes, Add the lima beans and cook until the pasta is al dente, or firm to the bite, and the lima beans are tender

Drain and toss the oil mixture and the pasta mixture together until blended

Lima Beans and Sun Dried Tomatoes
ingredients
- 6 tablespoons olive oil
- 1/2 cup coarsely chopped onion
- 8 sun-dried tomato halves packed in olive oil,
- blotted and cut into thin slices
- 1 garlic clove, minced
- 1 (10 ounce) package frozen Fordhook lima beans
- freshly ground black pepper to taste
