Heat the oil and butter in a large saucepan over medium heat

Add the carrots, onions, and garlic and saute for 3 minutes

Add the zucchini, yellow squash, and spices

Continue to saute for 3 min- utes

Reduce the heat to medium low and stir in the flour, blending it into the vegetables

Slowly add the wine and water, stirring constantly until the sauce has thickened

Add the lemon juice and tomatoes

Slowly cook for 5 more minutes

Spicy Vegetable Sauce
ingredients
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup each julienned carrots,onions, zucchini
- and yellow squash
- 1 garlic clove, minced
- 1/4 teaspoon white pepper
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon each paprika, black pepper
- and dried oregano
- 2 tablespoons flour
- 2/3 cup dry white wine
- 1/2 cup water
- juice of 1 lemon
- 2 medium-size fresh Italian plum tomatoes,
- halved and sliced
