Saute garlic in olive oil

Chop tomatoes and add to pan with garlic along with remaining ingredients. Bring to a boil and simmer uncovered for about 20 minutes

Sicilian Olive Sauce
ingredients
- 2 cloves garlic, chopped
- 2 tablespoons olive oil
- 1 (28 ounce) can plum tomatoes, drained
- 1/2 teaspoon dried oregano
- 3 tablespoons of fresh parsley
- 1 (6 ounce) jar red roasted peppers,
- drained and coarsely chopped
- 1 (6 ounce) jar marinated artichoke hearts
- 1 (6 ounce) can pitted ripe olives, drained
- 2 cooked boneless and skinless
- chicken breasts, chunked
- salt and freshly ground black pepper to taste
