    In a medium-size saucepan over medium heat, melt butter; add leeks and garlic

    Cook until leeks are soft

  • 3

    Cut ham into small squares

  • 4

    Stir into leeks

  • 5

    Cook a few minutes more. In a medium-size bowl, mix together ricotta and sour cream

    Add a little milk, if necessary, to make a smooth creamy sauce

  • 7

    Season with pepper

  • 8

    Add to pan with leeks and ham

  • 9

    Reduce heat to low and cook until sauce is heated through

  • 10

    Serve at once over hot pasta

  • 2 tablespoons butter
  • 2 leeks, thinly sliced
  • 1 garlic clove, crushed
  • 1 ounce thin ham slices
  • 2 cups ricotta cheese
  • 2/3 cup dairy sour cream
  • milk
  • freshly ground black pepper to taste
