    In a medium-size skillet, melt 2 tablespoons of but- ter

    Add mushrooms

    Saute gently until tender

    Set aside

    In a medium-size bowl, beat together creme fraiche, egg yolks, parmesan cheese, salt, pepper and nutmeg

    In a medium-size saucepan, melt remaining butter

  • 7

    Stir in creme fraiche mix- ture

  • 8

    Add peas

  • 9

    Cook over very low heat, stirring, until mixture is heated through and begins to thicken slightly

    Stir in cooked mushrooms

  • 11

    Serve over hot pasta at once and garnish with mint, if desired

    Serves 4.

ingredients

  • 1/3 cup butter
  • 2 cups sliced mushrooms
  • 2/3 cup creme fraiche
  • 2 egg yolks
  • 1/2 cup grated Parmesan cheese
  • salt and freshly ground black pepper to taste
  • and nutmeg to taste
  • 1-1/2 cups frozen green peas
  • fresh mint, optional
