Heat oil in a large skillet

Add onion and saute over low heat, stirring until golden

Add bacon and saute 2 more minutes

Squeeze juice and seeds from tomatoes and chop

Add tomatoes to skillet and cook, stirring, over medium heat, until soft- ened and sauce is slightly thickened about another 15 minutes

Add red pepper and salt to taste

Pass with grated Pecorino Romano cheese

- 6 tablespoons olive oil
- 1/2 cup chopped onion
- 8 strips lightly smoked, lean bacon
- 1 (28 ounce) can whole peeled tomatoes, drained
- Pinch of crushed dried red pepper
- salt to taste
- freshly grated Pecorino Romano cheese
