    Combine the peanut butter, coconut milk, lemon juice, soy sauce, brown sugar, ginger, garlic and cayenne in a saucepan

    Cook, stirring constantly, over medium heat, until the sauce is thick and fairly smooth, about 10 minutes

    Pour sauce into the blender and puree, adding the chicke n broth to thin as necessary

  • 4

    Serve with vegetables, pork or chicken.

  • 2/3 cup crunchy peanut butter
  • 1-1/2 cups unsweetened canned coconut milk
  • 1/4 cup fresh lemon juice
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon minced fresh ginger root
  • 4 cloves garlic, minced
  • Pinch cayenne pepper
  • 1/4 cup or more chicken broth
