ROASTED GINGER AND ORANGE CARROTS

- 1 pound carrots, peeled and halved
- crosswise and lengthwise
- 3 tablespoons butter, melted
- 1 tablespoon minced fresh ginger
- 2 tablespoons fresh orange juice
- 1 teaspoon grated orange zest
- 1 tablespoon honey
- Salt and pepper
- 1 tablespoon minced fresh parsley
- 2 (14 x 12 inch) sheets heavy-duty
- aluminum foil
