Trim all fat and silverskin from the pork and slice into 1-inch thick medallions

Prepare the marinade and add the pork slices

Cover and refrigerate for 1 hour. Remove pork from marinade and place on one sheet of the foil

Sprinkle with cilantro

Top with second sheet of foil and fold edges over three times to seal the foil packet

Rotate in the Flat Standard Basket for 15 minutes.
