Combine mint, garlic, lemon juice and olive oil in food processor or blender

Pour over the lamb chops, cover and refrigerate at least 4 hours. Mash together the Herb Butter ingredients, form into a log shape, wrap in plastic wrap and refrigerate. Rotate chops in the Standard Flat Basket for 15 minutes for medium rare

If not brown enough, position the basket facing the heating coils and push the switch to the pause-to-sear position

Rotate 2 to 3 minutes more on each side

Serve topped with a 1/2-inch slice of the Herb Butter.
MINTY LAMB CHOPS WITH HERB BUTTER
ingredients
- 1/3 cup chopped fresh mint
- 1 clove garlic, minced
- Juice of 1 lemon
- 1/2 cup olive oil
- Salt and pepper
- 8 loin lamb chops
- HERB BUTTER:
- 1/2 cup butter, at room temperature
- 2 tablespoons minced fresh mint
- 1 tablespoon minced fresh parsley
- 2 cloves garlic, minced
