Add cream and beef broth and boil until reduced to 1 cup

Whisk into Madeira mixture a bit at a time

Simmer until creamy

Keep warm. Rotate the steaks in the Flat Standard Basket for 16 minutes for rare or 20 minutes for medium

If not brown enough, position the basket facing the heating coils and push the switch to the pause-to-sear position

Rotate 2 to 3 minutes more on each side

SPENCER STEAK WITH BLUE CHEESE SAUCE
ingredients
- 3/4 cup Madeira wine
- 2 tablespoons minced shallots
- 1 cup whipping cream
- 1/2 cup beef broth
- 1/2 cup unsalted butter
- 6 ounces Blue cheese, crumbled
- 2 tablespoons Dijon mustard
- Salt and pepper
- 4 3/4-inch thick Spencer steaks
