    Combine the preserves, salad dressing and onion soup mix in a bowl

    Add the pork cubes, cover and marinate for 4 to 24 hours. Thread meat alternating with red pepper and zucchini cubes on the kebob skewers

    Rotate 25 to 30 minutes or to desired doneness

  • 4

    Remove pork cubes and vegetable cubes to serving plates

  • 5

    Serve with cooked white rice.

ingredients

  • 1(12 ounce) jar apricot preserves
  • 1 (8 ounce) bottle Russian salad dressing
  • 1 envelope onion soup mix
  • 1-1/2 pounds boneless pork loin
  • or tenderloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 2 zucchini, cut into 1-inch pieces
