    Combine the garlic, ginger, green onions, sherry, soy sauce, Hoisin sauce, ketchup, sugar, salt and pepper in a shallow dish

    Trim the pork of all fat and silverskin

    Add the meat to the marinade, turning to coat

    Cover and refrigerate for 3 to 4 hours, turning occasionally. Rotate the pork, one on each spit rod, 30 to 35 minutes or until the internal temperature reaches 150 fo 155 degrees on the instant thermometer

    Slice on a diagonal to serve.

  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • 4 green onions, minced
  • 1/4 cup dry sherry
  • 2 tablespoons soy sauce
  • 3 tablespoons Hoisin sauce
  • 3 tablespoons ketchup
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 2 pork tenderloins (1-1/2 to 2 pounds total)
