Stir together the preserves, juice and soy sauce

Reserve 3 tablespoons of the sauce and place the remaining sauce in the warming tray in the lower position to heat while the hens rotate. Cut the backbones out of the game hens and flatten by pressing down on the breast bones

Wash and thoroughly dry the game hens

Season both sides with salt and pepper and brush the game hens with the 3 tablespoons of sauce. Rotate the game hens in the Deep Basket for 40 to 45 minutes or until the internal temperature reaches 170 degrees on the instant thermometer inserted in the thigh meat

Serve hens with warmed sauce.

- 1/2 cup cherry preserves
- 1/4 cup cranberry or cran-cherry juice
- 2 tablespoons soy sauce
- 2 1-1/2 to 2 pound Rock Cornish game hens
- Salt and Pepper
