    Cut the chicken breasts lengthwise into 4 strips

    Combine the chicken strips, zucchini, red pepper, lemon zest and juice, sugar, oregano and salt and pepper to taste in a large bowl

    Toss to coat well

    Cover and let stand 15 minutes. Thread a zucchini, red pepper, then weave a strip of chicken on a kebob skewer, repeat and then finish with another zucchini and pepper

    Repeat 7 more times

    Rotate kebobs for 25 to 30 minutes or until the chicken and vegetables are cooked through.

  • 4 skinless boneless chicken breast halves
  • 1 zucchini, cut into 24 (1-inch) rounds
  • 1 red bell pepper,
  • cut into 24 (1-inch) squares
  • 1 teaspoon grated lemon zest
  • 3 tablespoons fresh lemon juice
  • 1-1/2 teaspoons sugar
  • 3/4 teaspoon dried oregano
  • Salt and pepper
