Combine eggs and mustard in a flat dish

Toss together the breadcrumbs, Parmesan cheese and paprika in another flat dish or on a sheet of wax paper. Wash and thoroughly dry the chicken pieces. Dip chicken pieces in the egg to coat well and then dredge in the breadcrumbs to make a thick crust. Rotate the chicken in the Flat Standard Basket for 45 minutes or until lightly browned and cooked through.

- 3 eggs, slightly beaten
- 1 tablespoon water
- 1 teaspoon Dijon mustard
- 2 cups seasoned dry breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 1/2 teaspoon paprika
- 1 3 pound chicken, cut into serving pieces
- or 4 chicken breasts
