    Prepare the Asian Citrus Marinade and pour half over the tuna steaks

    Refrigerate to marinate for 10 minutes to 1 hour. Place the tuna in the basket and rotate in the stopped position facing the heat rods for 4 minutes

    Turn basket and rotate the other side of the tuna for 4 minutes

  • 4

    It should be slightly pink in the center when tested. Toss the cabbage, lettuce, carrots, and bean sprouts with the remaining marinade

  • 5

    Divide evenly on serving plates and top with tuna

  • 6

    Sprinkle with sesame seeds and serve.

ingredients

  • Asian Citrus Marinade (see page 210)
  • 1-1/4 pound tuna steaks, cut 3/4-inch thick
  • 4 cups shredded Napa cabbage
  • 4 cups shredded red leaf lettuce
  • 2 carrots, cut in thin strips
  • 2 cups bean sprouts, rinsed and drained
  • 2 teaspoons toasted sesame seeds
