Cut the rotated pork into strips and place in a large bowl

Whisk together the salad dressing, ketchup, chili powder and cumin

Toss with pork and set aside while preparing the remaining ingredients. Toss together the beans, corn, tomato, green pepper, onion and cilantro

Add to the pork and toss well

Arrange a bed of lettuce on serving plates and top with pork salad

Garnish with corn chips.
PORK AND BEAN SALAD
ingredients
- 1 rotated Pork Tenderloin
- with Spicy Texas Rub (see page 91)
- 1/2 cup oil and vinegar salad dressing
- 2 teaspoons ketchup
- 1/2 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1 (15 ounce) can black beans,
- rinsed and drained
- 1 (15 ounce) can kidney beans,
- rinsed and drained
- 1 cup fresh or frozen corn kernels
- 1 cup diced fresh tomato
- 1 green bell pepper, diced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro or parsley
- 6 cups mixed lettuce greens
- 1 cup slightly crushed corn chips
