    Season the steak with salt and pepper

    Place the steak in the basket and rotate for 15 minutes for rare or 20 minutes for medium

    Remove steak and slice thinly across the grain. To make the dressing, combine the oil, sesame oil, chili sauce, soy sauce, vinegar, lemon juice, cilantro, ginger, orange zest and garlic in a bowl and whisk to blend well

    Add the beef strips and let stand for about 15 minutes. Just before serving, remove the beef from the dressing with a slotted utensil, reserving dressing

    Combine the beef, carrot, red pepper, onion, watercress or cilantro, mint and spinach in a large bowl

    add reserved dressing to taste and toss to coat all ingredients

    Serve immediately.

ingredients

  • 1 pound beef sirloin
  • Salt and pepper
  • 1/4 cup vegetable oil
  • 2 teaspoons Asian sesame oil
  • 1 teaspoon hot chili sauce or to taste
  • 2 teaspoons soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon freshly squeezed lemon juice
  • 2 teaspoons minced fresh cilantro
  • 1 teaspoon minced fresh ginger root
  • 2 teaspoons orange zest
  • 1 teaspoon minced garlic
  • 1 carrot, peeled & cut julienne
  • 1 red bell pepper, cut very thin julienne
  • 1/2 red onion, thinly sliced in half rings
  • 1 cup fresh watercress or cilantro sprigs
  • 1 bunch fresh spinach, washed,
  • trimmed and chilled
