Wash and pat dry the chicken--you may remove the skin, if you wish

Completely coat the chicken with the Southwestern Rub

Place chicken pieces in the basket and rotate for 30 to 40 minutes or until cooked through

Cool chicken and then shred or dice.
SOUTHWESTERN CHICKEN SALAD
ingredients
- 4 chicken breasts
- Southwestern Rub (see page 237)
- 1 cup diced celery
- 1/2 cup chopped red bell pepper
- 1/2 cup sliced black olives
- 1 (4 ounce) can diced green chilies
- 1/4 cup diced green onions
- 3 teaspoons fresh lemon juice
- 3 cups shredded fresh spinach
- 1/4 cup toasted pine nuts or almonds
- DRESSING:
- 1 cup mayonnaise
- 1/4 cup sour cream or yogurt
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/8 teaspoon freshly ground pepper
