Prepare Simple Pizza Crust

Preheat oven to 350F

While crust is rising, prepare Three Herb Pesto

Lightly brush a 14-inch pizza pan with olive oil

Shape dough to fit pizza pan

Spread pesto over dough and bake for 10 minutes. Meanwhile, slice and core the tomatoes and shred the mozzarella

Remove pizza from oven and place on a heat-safe surface

Toss mozzarella and garlic together

Sprinkle the cheese and garlic mixture on the pizza

Distribute the tomatoes and olives evenly across the top of the the pizza

Return pizza to oven and bake for an additional 25 minutes or until crust is crisp

Three Herb Pesto Pizza
ingredients
- 1 batch Simple Pizza Crust (page 119)
- 1/2 cup Three Herb Pesto (page 31)
- 2 tablespoons olive oil
- 1/4 cup sliced black olives
- 2 cups shredded mozzarella cheese
- 1 pound ripe Italian style tomatoes, cored and sliced
- 1 garlic clove, finely minced
- salt and freshly ground black pepper to taste
