Place yeast, sugar, and water in a large bowl and mix to dissolve

Set aside in a warm, draft-free place for 5 minutes or until foamy. Place flour and salt in a food processor or blender and pulse once or twice to sift

With machine running slowly pour in oil and yeast mix- ture and process to form a rough dough

Turn dough onto a lightly floured surface and knead for 5 minutes or until soft and shiny

Add more flour if necessary. Lightly oil a large bowl then roll the dough around to cover the surface with oil

Cover bowl tightly with plastic wrap and place in a warm, draft-free place for 1-1/2 to 2 hours or until dough has doubled in volume

Knock down and remove dough from bowl

Knead briefly before using

Makes 1 large or 4 individual crusts.
SIMPLE PIZZA CRUST
ingredients
- 1 teaspoon active dry yeast
- pinch sugar
- 2/3 cup warm water
- 2 cups flour
- 1/2 teaspoon salt
- 1/4 cup olive oil
