    Bring 3 quarts of water with bay leaf, lemon slices, and salt to a boil

    Add lobster to boiling water

    Simmer, covered, for 5 to 8 minutes, until tails are cooked through

    Remove lobster with a slotted spoon

    Allow to cool

    Slit the underside and remove meat

  • 7

    Cut into bite-sized chunks and refrig- erate. Combine the pesto, sour cream, mayonnaise, and lime juice in a small bowl

    Add salt and pepper to taste

    Arrange the lobster and avocado slices on the lettuce

  • 10

    Pour the cilantro sauce over the shrimp and garnish with lime and cilantro

    Serves 2.

  • 1 bay leaf, crumbled
  • 3 or 4 lemon slices, halved
  • 1/4 teaspoon salt
  • 2 large lobster tails
  • 3 tablespoons Cilantro Pesto
  • 3 tablespoons sour cream
  • 3 tablespoons mayonnaise
  • 1 teaspoon lime juice
  • salt and freshly ground white pepper to taste
  • Romaine lettuce leaves
  • 1 ripe avocado, sliced
  • lime slices and sprigs for garnish
