Wash and string the peas

Cut on the diagonal into 1/2-inch pieces

You should have about 3 cups. In a large pan, melt the butter with half of the pesto

Add the peas and scallions and saute over a low heat until tender, 8 to 10 minutes

Add the cream, and salt and pepper to taste

Reduce until the sauce is slightly thickened, about 2 minutes. Stir in the remaining pesto

Taste and adjust for seasoning

Toss with hot pasta and serve with freshly grated Parmesan

Garlic Pesto Snow Peas With Pasta
ingredients
- 1 pound dry or 1 load fresh pasta
- 3/4 pound fresh snow peas
- OR young sugar snap peas
- 2 tablespoons butter
- 1/4 cup Garlic Chive Pesto
- OR Garlic Thyme Pesto
- 1 cup thinly sliced scallions
- 1 pint half and half
- salt and freshly ground pepper to taste
- freshly grated Parmesan cheese
