Combine anchovies, parsley, garlic, oregano, thyme, and nuts in a blender or food processor

Blend with pulsing action to mix

Add cheese and whirl for 15 seconds

With the machine running, slowly add the olive oil

Season to taste with freshly ground black pepper

Continue to process until pesto reaches desired consistency

Allow pesto to stand for about 5 minutes before serving to allow flavors to develop. Makes about 1 cup of pesto.
Herbed Anchovy Pesto
ingredients
- 1-1/2 to 2 tablespoons chopped anchovy fillets
- 1 cup fresh Italian flat-leaf parsley leaves
- 2 garlic cloves
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1/3 cup pine nuts, lightly toasted
- 1/4 cup freshly grated Parmesan cheese
- 1/3 cup virgin olive oil
- freshly ground black pepper to taste
