Combine tarragon, parsley, garlic, and nuts in a blender or food processor

Blend with pulsing action to mix

Add cheese and cream and whirl for 15 seconds

With the machine running, slowly add the olive oil

Add lemon juice and season to taste with salt and freshly ground black pepper

Continue to process until pesto reaches desired consistency

Allow pesto to stand for about 5 min- utes before serving to allow flavors to develop. Makes about 1 cup of pesto
Tarragon Cream Pesto
ingredients
- 1 cup fresh French tarragon leaves
- 1/2 cup fresh Italian flat-leaf parsley leaves
- 1 garlic cloves
- 1/2 cup blanched almonds, lightly toasted
- 1/4 cup freshly grated Parmesan cheese
- 3 tablespoons heavy cream
- 1/2 cup virgin olive oil
- 2 tablespoons fresh lemon juice
- salt and freshly ground black pepper to taste
