Combine lemon thyme, parsley, garlic, and nuts in a blender or food processor

Blend with pulsing action to mix

Add cheese and whirl for 15 sec- onds

With the machine running, slowly add the olive oil

Season to taste with salt and freshly ground black pepper

Continue to process until pesto reaches desired consistency

Allow pesto to stand for about 5 minutes before serving to allow flavors to develop. Makes about 1 cup of pesto.
Lemon Thyme Pesto
ingredients
- 1/2 cup fresh lemon thyme leaves
- 1-1/2 cups fresh Italian flat-leaf parsley leaves
- 3 garlic cloves
- 1/2 cup walnuts, lightly toasted
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup virgin olive oil
- salt and freshly ground black pepper to taste
