Combine cilantro, parsley, garlic, and nuts in a blender or food processor

Blend with pulsing action to mix

Add the lime zest and juice and blend again

Add cheese and whirl for 15 seconds

With the machine running, slowly add the olive oil

Season to taste with salt and freshly ground black pepper

Continue to process until pesto reaches desired consistency

Allow pesto to stand for about 5 minutes before serving to allow flavors to develop. Makes about 1-1/4 cups of pesto.
Cilantro Pejto
ingredients
- 1-1/2 cups fresh cilantro leaves
- 1/2 cup fresh Italian flat-leaf parsley leaves
- 2 garlic cloves
- 1/4 cup pine nuts, lightly toasted
- 1 teaspoon lime zest (avoid white pith)
- 1 teaspoon fresh lime juice
- 1/3 cup freshly grated Parmesan cheese
- 1/3 cup virgin olive oil
- salt and freshly ground black pepper to taste
