Combine spinach, parsley, garlic, nuts and basil in a blender or food processor

Blend with pulsing action to mix

Add cheeses and whirl for 15 sec- onds

With the machine running, slowly add the olive oil

Season to taste with salt and freshly ground black pepper

Continue to process until pesto reaches desired consistency

Allow pesto to stand for about 5 minutes before serving to allow flavors to develop. Makes about 1-1/2 cups of pesto.
Spinach Pesto
ingredients
- 2 cups fresh spinach leaves
- 1/2 cup fresh parsley leaves
- 1 garlic clove
- 1/4 cup pine nuts or walnuts
- 1 teaspoon dried basil
- 1/2 cup freshly grated Parmesan cheese
- 3/4 cup virgin olive oil
- salt and freshly ground black pepper to taste
