Marinara Sauce

    Saute garlic in olive oil

    If using fresh tomatoes, remove skin by blanching in water for 30 seconds

  • 3

    Then cut off stem end and squeeze out seeds

  • 4

    If using canned tomatoes, drain the liquid

  • 5

    Chop tomatoes and add to pan with garlic along with remaining ingredients

  • 6

    Bring to a boil and simmer uncovered for about 20 minutes

  • 7

    Serves 4.

Marinara Sauce

ingredients

  • 4 cloves garlic, chopped
  • 4 tablespoons olive oil
  • 4 pounds fresh tomatoes OR
  • 4 (14-1/2 ounce) cans plum tomatoes
  • 1 teaspoon dried oregano
  • 6 tablespoons of fresh parsley
  • salt and freshly ground black pepper to taste
