    In a large bowl, cream butter and sugar until fluffy

    Beat in egg yolks

    Blend in mashed potatoes, vanilla, then cocoa. In separate bowl, sift together remaining dry ingredi- ents and alternately add them to sugar/potato mixture along with the milk. Beat egg whites to stiff-peak stage

    Fold in nuts, then egg whites

  • 5

    Pour the batter into two buttered loaf pans (5 x 9inch) or a 13 x 9 x 2 inch pan

    Bake in 350 F

    oven for 40-50 minutes.

  • 1 cup hot mashed potatoes
  • 1 teaspoon vanilla
  • 1/2 cup cocoa (unsweetened)
  • 2 cups cake flour
  • 1 /2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon, cinnamon
  • 1 teaspoon cloves
  • 1 /2 teaspoon nutmeg
  • 1 cup milk
  • 1 cup chopped nuts
  • 4 egg whites
