Combine the water and sugar in a 2-quart saucepan

Simmer for 5 minutes to create a simple syrup

Remove from the heat and chill. Pour the chilled mixture into the canister of your ice cream freezer

Add lime juice, lemon juice, and the lime rind

Mix with a wooden spoon or spatula

Follow the directions for your ice cream maker to create a firm ice. To serve, form into balls with an ice cream scoop, dip- ping it into warm water between scoops

Serve in fluted sherbets but wineglasses-especially the tulip type-will also work

- 4-3/4 cups water
- 2-1/4 cups sugar
- 3 cups freshly squeezed lime juice
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon grated lime rind
