Mix the flour, salt, and sugar and scoop a hollow in it

Pour in the melted shortening and blend it with the sourdough starter inside the hollow. Then mix into a soft batter

Add flour if too moist; or milk or water if too dry

Knead well but don't let the gases escape

Bang it around as fast as possible and break off into two loaf-sized chunks

Let rise until dou- bled in size, punch down, then place in greased bread pans

Preheat oven to 425F

and bake for 15 minutes at this heat

Turn heat down to 350F

and finish baking for for about an hour

Baking should result in doubling the size again, and the loaves should turn out crispy brown.
